Crock Pot Chicken Taco Chili



I found the best recipe last week. I made it on Sunday and it was one of the best things I have ever made. It was super easy and fed us for two days! 

I was torn between two of my favorite sides to have, so of course I had both. I made cornbread and covered it in honey-butter. Always a winner. In between bites of cornbread I was scooping my chili with tortilla chips!

Crock Pot Chicken Taco Chili

Serves 6
Ingredients
① 1 16 oz. can black beans, drained
② 1 16 oz. can kidney beans, drained
③ 2 garlic cloves, minced
④ 1 medium onion, chopped 
⑤ 1 jalapeno pepper, minced
⑥ 1 green bell pepper, chopped
⑦ 10 oz. package frozen corn kernels 
⑧ 1 8 oz. can tomato sauce 
⑨ 1 28 oz. can diced tomatoes 
⑩ 1 tbsp. cumin 
⑪ 1 tbsp. chili powder
⑫ 1 tsp. dried oregano
⑬ 1 tsp. kosher salt
⑭ 1/2 tsp. freshly ground pepper
2 boneless, skinless chicken breasts, uncooked
1/4 cup chopped fresh cilantro
Optional toppings: Additional cilantro, shredded cheese, chopped scallions, red onion, sour cream, etc.

Directions
Combine ingredients 1 through 14 in a slow cooker*. Stir until combined. Place uncooked chicken on top and cover. Cook on low for 6 hours or on high for 4 hours, stirring occasionally.

Thirty minutes before serving, pull chicken breasts apart with two forks. Stir and continue cooking. Top with fresh cilantro or any other desired toppings.

Running a Few Weeks Behind

I am the worst blogger ever! I love looking at other people's blogs, but always come away thinking that I don't do anything exciting enough. Time for an attitude change! So that being the case...here are some pictures of what we have been up to.


General Conference is one of my favorite times of the year. Luckily it comes around twice. I was able to go to the General Relief Society Meeting with my sister and a good friend. Sadly, we were running an hour and a half late (Literally. Traffic was insane! There was an accident on the freeway) so we didn't get any pictures. We looked good though. 



Scott was awesome enough to get the tickets. Megan wasn't able to make it. Although we had fun when Scott was detained at the front door because he set the metal detectors off with his batman belt buckle, Megan was missed. 


A week later we went to Hee Haw farms with Jesse and Emily. They are great friends and we are so glad they invited us to go with them. My camera isn't the greatest in the dark, so we only took a few pictures. 

 Brett was very proud of himself sitting on the tractor. He is so tough and manly in this picture I can hardly stand it. (Please tell him that)
